Minimal Skins truly does bring minimal design to Joomla templates. Their focus is mainly on photography based portfolio websites and blogs, and their strength is in the fact that they allow the subject to dictate the overall design.
Their current release is called Accentive Photography, and it's a great example of spare design in the best sense. It allows a photographer's work to be the focus, and also features a blog and some good social networking links.
Everything about Minimal Skins says simplicity, from the layout of their templates to their license they offer to subscribers of their "club" website. A nominal $29 fee grants you lifetime access to all of their templates, including new ones. As their website says, "We just love simple."
You won't be overwhelmed with bells and whistles with these templates, but in a market that seems to be moving toward "more is always better," that stripped down choice could be very refreshing.
As Minimal Skins points out, however, they aren't sacrificing features, simply allowing the content to shine through.
